Irish Murphy’s Brisbane is a beloved, iconic Irish pub in the heart of the city, offering hearty traditional fare with a modern twist, paired with warm hospitality.


Trove Cocktail Bar, our neighbouring venue, takes a more avant-garde approach, creating innovative craft cocktails made from Australian native ingredients, accompanied by a menu that complements its sophisticated, local, and seasonal theme.


Though distinct in style, both venues share a fully equipped modern kitchen, and we are seeking an experienced Head Chef who can lead our team, overseeing culinary operations across both businesses while maintaining a balance between Irish comfort classics and Trove’s modern, native-inspired offerings.


Key Responsibilities:

  • Lead and manage kitchen operations for both Irish Murphy’s and Trove Cocktail Bar.

  • Develop and execute creative, seasonal menus that reflect the distinct identities of both venues (Irish-inspired for Irish Murphy’s and native Australian for Trove).

  • Ensure food is prepared to the highest standards, with a focus on quality, presentation, and efficiency.

  • Maintain relationships with local suppliers and ensure sustainable and high-quality sourcing, especially native ingredients for Trove’s menu.

  • Manage inventory, food costs, and kitchen staff schedules to optimise efficiency.

  • Uphold strict food safety and hygiene standards in line with regulations.

  • Train and mentor kitchen staff, fostering a collaborative and positive work environment.

  • Collaborate with management teams to create menus that align with customer preferences and brand vision.


Qualifications and Experience:

  • Proven experience as a Head Chef or Senior Chef in a fast-paced restaurant or bar setting.

  • A passion for both traditional and innovative cuisines, with a flair for creating unique dishes.

  • Strong leadership, communication, and organizational skills.

  • Experience with sourcing native ingredients or an eagerness to develop knowledge in this area.

  • Ability to manage multiple menus and concepts within one kitchen.

  • Familiarity with Irish cuisine and/or the ability to develop native ingredient-based dishes.

  • Commitment to sustainability and high standards in food quality and kitchen operations.

  • Excellent understanding of food safety and hygiene practices.
